Somewhat sweet and savory...reduce the amount of red pepper flakes - my family like things spicy!

Recipe Ingredients for Butternut squash soup

2 cloves garlic, minced
3 leeks, sliced
1 squash, cubed
5 cups water
2 tablespoons kosher salt
2 tablespoons olive oil
1 tablespoon lemon pepper
1 tablespoon red pepper flakes

Recipe Directions for Butternut squash soup

  1. Peel and chop butternut squash into large chunks and boil in 4 cups water until soft enough to easily pierce with fork. Don't discard the water!

  2. Slice whites of leeks only and soak in water to remove sediment, change water several times

  3. Add 2 tablespoons oil to large pot

  4. Add minced garlic for 30 seconds

  5. Add leeks and stir well. Don't let the garlic burn!

  6. Add red pepper flakes and lemon pepper (to taste).

  7. Add the squash and the water it was boiled in.

  8. Stir well.

  9. Add salt to taste.

  10. Let simmer for 15 minutes.

  11. Add some water if it looks too thick.

  12. Puree or serve as is.
