Recipe Ingredients for Butternut Squash Soup

2 1/2 cup, cubes Squash, Winter, Butternut
1 cup slices Parsnips
1 medium Apple Apples
1 tbsp Extra Virgin Olive Oil
1 cup Milk, Buttermilk, Fluid, Cultured, Lowfat
24 oz Water

Recipe Directions for Butternut Squash Soup

Roast vegetables with salt, pepper, and olive oil until tender. In a large saucepan, bring water and buttermilk to a simmer. Add roasted vegetables to milk mixture and allow to simmer together for a little while. In a food processor, blend all of the ingredients in batches to reach desired consistency. Top with lemon juice and parmesan cheese when serving.
