Ultra thick and creamy simple soup where the sweetness of the squash really stands out. The trick is in the straining. Just push it through a wire mesh strainer and discard the rest of the fibers.

Recipe Ingredients for Butternut Squash Soup

2 lbs Butternut squash
1 cup cream
1 quart chicken stock
1 salt and pepper

Recipe Directions for Butternut Squash Soup

  1. skin and cube butternut squash.

  2. Put in pot with 1 cup of water and simmer until squash is tender and collapsing.

  3. add cream, simmer until it's incorporated into the squash.

  4. Add half the stock and reduce.

  5. Add last bit of stock, puree, strain, season.
