Recipe Ingredients for Butternut Squash Soup

2 medium onions, chopped
2 1/2 lb butternut squash,cut into cubes
1 teaspoon ground cumin
1 teaspoon ground coriander
3 cups fat free low sodium chicken broth

Recipe Directions for Butternut Squash Soup

  1. in a 4 quart saucepan sprayed with cooking spray, brown onions until soft and tender.

  2. Add squash, cumin, coriander, stir well. Add chicken broth and bring to a boil. Reduce heat to low and simmer for 15-20 mins.

  3. Puree the soup in a blender or food processor. Transfer back to pan. add salt and pepper to taste, and garnish with fresh cilantro leaves if desired
