Butternut Squash Soup Recipe

An easy soup with tons of flavor. Can be made vegetarian and kosher by the removal of meat. You can also add rice.

Recipe Ingredients for Butternut squash soup

2 lbs chopped butternut squash
16 oz fire roasted tomatoes, drained
48 oz beef stew meat
4 cups beef broth
1 cup sweet peppers
1 1/5 oz knorr vegtable soup mix
1 cup chopped onion
1 lb chopped carrots
1 lb chopped celery
4 tbsp extra virgin olive oil
6 cloves chopped garlic

Recipe Directions for Butternut squash soup

  1. Preheat oven to 375.

  2. Add 8 cups of water plus beef broth to a large soup pot over medium heat.

  3. Add knorr vegtable soup mix.

  4. Add chopped celery and carrots.

  5. Spread chopped butternut squash and sweet peppers on a baking sheet, and pour tomatoes on top.

  6. Sprinkle chopped garlic on top and drizzle with olive oil.

  7. Place sheet in oven for 10-15 mins until squash is slightly fork tender.

  8. Add the squash/tomatoe mixture to soup.

  9. Heat a separate skillet on high and add 1 tbsp of olive oil.

  10. Cut stew beef into smaller bite size pieces if it hasn't been done already.Season with salt and pepper.

  11. Sear the stew beef for about 3-4mins per side.( This step can be skipped however it does increase cooking time by about 1 hour)

  12. Finish with adding the beef stew meat to soup pot and let simmer for 1-2 hours.

  13. Enjoy!
