Recipe Ingredients for Butternut Squash Soup

4 cups butternut squash
1 tsp olive oil
4 tbsp onion
2 cups chicken stock
1/4 tsp marjoram
1/4 tsp ground black pepper
1 pinch cayenne pepper
8 ounces neufchatel cheese

Recipe Directions for Butternut Squash Soup

Prick squash several times with a fork, and microwave for several minutes on high until tender. Remove and allow to cool, until able to be handled. Chop onion and saute in oil in a pot. While onions are sauteing, cut squash in half lengthwise. Remove and discard seeds, pulp, and skin. Combine squash, onions, stock, seasonings, and cheese and puree. Return all ingredients back to pot. Simmer for about 20 minutes to allow to the soup to warm and flavors to blend. Add salt and additional pepper to taste.
