A rich soup made with fall squash

Recipe Ingredients for Butternut Squash Soup

2 lbs butternut squash
1 lb. acorn squash
2 carrots
2 stalks celery
1 onion
32 oz chicken stock
1/4 cup white wine
1/3 cup heavy cream
1 tablespoon dry thyme
1 teaspoon ground ginger
1/4 teaspoon ground nutmeg

Recipe Directions for Butternut Squash Soup

  1. Cut the ends off the squash, and then split in half vertically. Scrape out the seeds. Drizzle the cut side of the squash with olive oil, salt and pepper. Bake cut side down for 1 hour to 1.5 hours at 350* F, on a lined baking sheet. Once the squash is tender, allow it to cool to room temperature.

  2. Cut onions, celery, and carrots into a small dice. Sweat the carrots in a large pot. Once they are almost tender, add the onions and celery. Sweat all vegetables until they are soft.

  3. Scrape all the flesh from the squash into the pot with the other vegetables. Season with salt and pepper. Allow the squash to cook for a few minutes, then deglaze with white wine. Add stock, and spices. Bring to a simmer. Using a stick blender, puree the soup. Adjust seasoning, and finish with cream.
