Recipe Ingredients for Butternut squash soup

3 tbs olive oil
3 small red onions
6 cloves garlic
6 cups butternut squash
4 tbs half and half
1 tsp salt
1/2 tsp pepper
4 cups low sodium chicken broth
2 cups water

Recipe Directions for Butternut squash soup

  1. peel and quarter the onions.

  2. Peel the garlic cloves

  3. In a stock pot, saute the onion and garlic in the olive oil.

  4. Peel the squash and cut into large cubes.

  5. Add the squash, chicken stock, and water to the stock pot. The liquid should just cover the squash.

  6. Cook until tender.

  7. Let sit about 20 minutes to cool, then put in a blender and puree.

  8. Return to stock pot and stir in cream, salt, and pepper.
