This is a great, savory soup that uses any squash (acorn, butternut, pumpkin). By also adding zucchini and carrots, the vegetable factor is raised so the soup's value is not just starchy vegetables. For the once a week vegetarian meal, just omit the turkey ham. If one can afford the sour cream dollop on top, and a slice of rustic bread, it makes a great dinner.

Recipe Ingredients for Butternut Squash Soup


BUTTERNUT SQUASH SOUP:
6 cups low fat chicken broth
2 cups apple juice or apple cider
3 lbs butternut squash, peeled and diced
6 cups zucchini, grated
4 cloves garlic, minced
2 onions, peeled and chopped
4 carrots, peeled and diced
2 apples, peeled and diced
1 lb. turkey ham, diced
1 tbs. lemon juice
1 tsp. salt
1/2 tsp.white pepper
2 tbs. sage
1/2 tsp. ginger

Recipe Directions for Butternut Squash Soup

  1. In a large dutch oven or other pan, saute the garlic and the onion.

  2. Cooking over high heat,add the broth and juice to the pan and bring to a boil.

  3. Peel the squash, seed, and cut into 1-inch pieces. You need 7-8 cups. Grate the zucchini, and peel and dice the onions and carrots. Add to the soup pot. Add the seasonings; cover, and return to a boil. Reduce the heat and simmer. Correct seasonings, if needed. Continue to simmer until squash is very tender. Allow to cool.

  4. Once soup has cooled, use a slotted spoon to transfer the vegetables to a blender or food processor. Puree until smooth, or leave a portion to remain chunky in the soup. Return the pureed vegetables to the soup pot; stir over medium heat until soup is hot.
