Recipe Ingredients for Butternut Squash Soup

2 tablespoons smart balance
1 onion, chopped (about 1/2 cup)
2 pounds butternut squash, peeled and cubed
2 cups water
1/2 teaspoon marjoram leaves
1/4 teaspoon black pepper
1/8 teaspoon cayenne
2 bouillon cubes, vegetarian
1 package fat free cream cheese, cubed

Recipe Directions for Butternut Squash Soup

  1. In 10 inch skillet melt smart balance over medium heat.

  2. Cook onion in smart balance until it is crisp-tender

  3. In a slow cooker mix onion and remaining ingredients except for cream cheese.

  4. Cover and cook for 6-8 hours.

  5. In blender or food processor place one half of soup mixture at a time.

  6. Blend until smooth and return to cooker.

  7. Using a wire whisk stir in cream cheese until cheese is melted and soup is smooth.

  8. Serve.
