Recipe Ingredients for Butternut Squash Soup

3 winter squash, butternut medium
1 1/2 tsp. ground cumin
3/4 tsp. ground coriander
3/8 tsp. chili powder
1/2 tsp. sweet paprika
3/8 tsp. ground cinnamon
1/5 tsp. ground allspice
1/5 tsp. ground ginger
1/8 tsp. cayenne pepper
1/10 tsp. ground nutmeg
2 tsp olive oil
2 cloves garlic
2 medium potatoes, without skin
1 medium apple
1/4 onion, medium
2 tsp margarine
1 T olive oil
4 c soup stock chicken home prepared

Recipe Directions for Butternut Squash Soup

  1. Wash and cut each squash into thirds, discarding seeds and seed pulp.

  2. Combine spices (cumin, coriander, chili,paprika, cinnamon, allspice, ginger, cayenne and nutmeg), adjusting amounts if desired.

  3. Preheat oven to 350.

  4. Place squash, cut side up, on baking sheet with sides (line with foil).

  5. Spread olive oil over squash

  6. Lightly salt & pepper squash, if desired.

  7. Sprinkle squash with spice mix.

  8. Smash and chop garlic. Add to squash.

  9. Wash potatoes, leaving skin on.

  10. Bake squash and potatoes for one hour.

  11. Remove from oven and allow to cool.

  12. Chop onion and apple, and saute them in margarine and oil. (I use the soup pot.)

  13. Add cooked apple and onion to food processor, chop for a few seconds, and return to pot. Add two cups chicken stock and begin to heat the mix.

  14. Scrape potato and squash from skin and food process with remaining stock. May need to do this in a few batches.

  15. Add to soup pot and heat over medium heat to boiling.

  16. Simmer about 15 minutes.
