Made with chicken stock cubes. Next time use 2 whole cubes of stock. More ginger root and garlic and less thyme/oregano.

Recipe Ingredients for Butternut Squash Soup

1 tbsp olive oil
4 small red onions
1160 g butternut squash
3 cloves garlic
17 g Chicken stock cubes
1 litre water
9 g ginger root
1 tsp rosemary
1 tsp salt
1 tsp black pepper
1/2 tsp thyme
1/2 tsp oregano

Recipe Directions for Butternut Squash Soup

  1. Finely dice onion and stir fry in the olive oil.

  2. Peel, deseed and cube squash. Add to onions and lightly fry.

  3. Squash and peel garlic cloves, put in pan.

  4. Dissolve stock cubes with 500ml hot water. Pour onto veg mix and top with 500ml more water.

  5. Peel and chop up ginger (I chop in four chunky slices). Simmer low heat with lid for 20mins until squash is ready to mush up.

  6. Add 1 tsp dried rosemary. Add 1 tsp of salt (or to taste)

  7. Mash up or blend and serve with 1tsp extra virgin olive oil. Great with crusty bread.
