Recipe Ingredients for Butternut Squash soup

16 oz Butternut Squash
1 onion
1 potato
2 stock cubes
1 tsp nutmeg
1 tbsp olive oil

Recipe Directions for Butternut Squash soup

  1. Chop onion and fry off in olive oil. Add the nutmeg

  2. Add the chopped butternut squash, potato, water and stock cubes and bring to the boil.

  3. Reduce heat and simmer for 15-20 minutes until the squash and potatoes are soft.

  4. Remove from the heat and blend until thick and smooth.
