I found this recipe on one of my internet-expeditions. I make it all the time and it turns out wonderful. Be sure to use fresh onion (not leftover) as it will affect the flavor. The original recipe called for ALLSPICE, but because I never seem to remember this, I omitted it from the recipe.

Recipe Ingredients for Butternut Squash Soup

2 lbs butternut squash
2 tbsp olive oil
1 small onion
4 cups chicken broth or vegetable broth
2 small apples
1 1/2 tsp salt
1/4 tsp black pepper
1/4 tsp nutmeg
1/4 tsp coriander
1/4 tsp cinnamon

Recipe Directions for Butternut Squash Soup

  1. Half the butternut squash lengthwise and remove all seeds and pulp. Brush the flesh with olive oil and roast in the oven at 400 for 15 minutes (or microwave on high for 2-5 minutes). Remove peel and cube.

  2. Peel and cube the apples. Dice onions.

  3. Combine all ingredients in large stock pot or a 5-qt crockpot.

  4. CROCKPOT: Cover and cook on low for 6 to 8 hours, or on high for about 4.

  5. STOVETOP: Boil for approximately 30 minutes, or until squash is "fork-tender".

  6. Blend in small batches with a stand blender or food processor.

  7. If you prefer a richer soup, add heavy cream to taste. Careful - this changes the nutritional information.
