Soup made from baked butternut squash with grated ginger and chopped onions sauteed in butter and made into soup with chicken broth.

Recipe Ingredients for Butternut Squash Soup

4.34 lbs Butternut Squash
1 large chopped onion
2 tbsp Grated Fresh Ginger
6 tbsp Unsalted Butter
7 cups Fat Free Low Sodium Chicken Broth

Recipe Directions for Butternut Squash Soup

Cut butternut squash in half, take out seeds, place in roasting pan sprayed with oil cut side own. Cook for 45 min. or until done. After cooled, take pulp out of skin and set aside. While baking, saute onions and grated ginger in pot with butter, 10 min until soft. Put in chicken broth, bring to simmer and simmer for 10 min. Put in butternut squash pulp. Puree until smooth, bring to simmer and serve.
