Healthy Butternut Squash Soup Got this recipe from Serious eats. Didn't add the cream and used water instead of stock.

Recipe Ingredients for Butternut Squash Soup

3 lb. Butternut Squash
1 Vidalia Onion
8 garlic cloves (1 Head)
3 1/2 cups of water
1 teaspoon salt
1/2 teaspoon pepper
1 1/2 tablespoon Olive Oil

Recipe Directions for Butternut Squash Soup

  1. Peel and cube butternut squash

  2. Chop Vaidalia Onion

  3. Peel garlic

  4. Toss in a Bowl with oil

  5. Place in a baking dish, add 1 cup of water, and sprinkle with 1/2 teaspoon salt.

  6. Bake at 350 for 1.5 Hours

  7. Pour veggie and remaining water into a Large pot, add remaining salt and pepper, (to taste)

  8. Cook over medium heat for 30 minutes

  9. Puree all, and enjoy.
