This soup is great alone or with a salad. Its creamy, healthy and taste great. Serving size is 1 Cup but its so low in calories I usually eat two.

Recipe Ingredients for Butternut Squash Soup

246 g onion
2 tbsp extra virgin olive oil
1/2 cup celery
3 1/2 cups chicken broth
1/4 cup leeks
968 g butternut squash
1/2 cup white wine
4 cups water
1 tsp salt
10 tbsp evaporated milk

Recipe Directions for Butternut Squash Soup

  1. Sautee the onions, leeks and celery (garlic optional) in the oil.

  2. After vegetables have softened and appear translucent add the white wine and let it simmer away the alcohol.

  3. Then add the chicken broth (I use low sodium) and cut and peeled squash.

  4. Add remaining water and salt and cook until the squash is tender.

  5. Use blender to puree the soup then add evaporated milk (you can also use skim milk) and mix.
