A very hearty, comfort food soup yet very low in fat and calories! Perfect on a cold winters night. Note that I actually used 4 coups of fat free chicken broth, not 1.56 of regular chicken broth but I couldn't bring up the fat free and wanted the caloric value to be correct.

Recipe Ingredients for Butternut Squash Soup

1.56 cups chicken broth
2 cups cauliflower
2 cups butternut squash, cooked, baked, without salt
1 large carrot
1 celery stalk
1 medium onion
1 tbsp Extra Virgin Olive Oil
1/2 tsp salt
1/4 tsp pepper
1/4 tsp cayenne pepper
1/4 tsp allspice
2 tsp fresh ginger

Recipe Directions for Butternut Squash Soup

  1. Roast Butternut Squash in oven at 360C for 1 hour. Let cool, peel and seed

  2. chop onion, celery and carrot and sautee in oil until onion is soft. Add squash, broth and cauliflower and bring to a boil. Add salt, pepper, cayenne pepper, allspice and ginger and simmer 30 minutes.

  3. With handheld braun mixer or food processer, puree all ingredients until smooth. If soup is too thick, add extra broth or water until desired texture is reached.
