Recipe Ingredients for Butternut Squash Soup

1 1/2 pounds butternut squash
1 yellow onion
1 apples
2 tbsp Olive Oil
1 tsp Kosher Salt
1 tsp Pepper
28 ounces Chicken Stock
1/4 tsp Curry Powder

Recipe Directions for Butternut Squash Soup

Cut squash, apples and onions into 1 inch cubes. Spread in single layer on baking sheets, spray with olive oil, salt & pepper. Roast for 35 to 45 minutes until very tender. Heat chicken stock to a simmer. Puree vegetables in food processor and pour into largo pot. Add chicken stock to make a thick soup. Add curry powder, 1 Tsp Salt and 1/2 Tsp pepper. Serve hot, with sliced scallions, flaked coconut, diced banana or roasted cashews.
