1 tbsp olive oil
1 large onion
4 cloves garlic, minced
2 tbsp ginger
62 ounces chicken broth
4 cups butternut squash, baked and peeled
1 tsp thyme

  1. saute onion, ginger, and garlic in butter until soft

  2. add chicken broth and butternut squash snd simmer about 10-15 minutes

  3. puree & serve
