Creamy, but light and filling soup. Most enjoyable on long dark winter nights.

Recipe Ingredients for Butternut squash soup

1 1/2 cups butternut squash
1 red onion
1/4 tbsp pumpkin seed oil
1 clove garlic
1 tbsp fresh ginger
1 tbsp of curry powder
1 pepper, nutmeg

Recipe Directions for Butternut squash soup

  1. Cut and clean squash (keep seeds if you like them!)

  2. Grill squash in oven (200 C, about 30 min) until soft

  3. Heat pumpkin oil, fry onion in it

  4. Put the curry powder in and keep heating for a few seconds

  5. Add squash, fresh ginger, garlic, pepper and nutmeg and pour hot water until it just covers everything

  6. Bring it to a boil

  7. Mix it all in a blender

  8. Enjoy it! :) Jo etvagyat!
