Recipe Ingredients for Butternut Squash Soup

8 cups butternut squash
1 cups chopped onion
2 medium carrots
2 stalks celery
2 cups chopped potatoes
2 cups chopped sweet potatoes
6 cups low sodium chicken stock
1/4 cup butter

Recipe Directions for Butternut Squash Soup

  1. Peel, seed and cube the squash (2 medium or 1 large)

  2. chop onion, carrots, potatoes, celery.

  3. Put into pot with butter and brown for 5 minutes

  4. add one container of chicken stock so veggies are covered (can add a bit of water if needed) - veg can be slightly uncovered on top.

  5. simmer 40 minutes

  6. put into blender and puree.

  7. EAT
