more or less what Giada on FN made a few days ago - DELICIOUS. Recorded to track calories. I added cream to it, but the rest is pretty much her recipe from her show.

Recipe Ingredients for butternut squash soup

18 oz butternut squash
3 cloves garlic
1/2 small onion
2 carrots
6 cups water
1/4 cup cream
1 tsp salt
1 tsp pepper
1 tsp butter

Recipe Directions for butternut squash soup

  1. lightly sautee onion, carrot chunks in butter for 4-5 minutes, add garlic cloves, whole or chopped.

  2. Put everything with the squash in water and simmer for about 30 minutes

  3. puree with a blender or hand stick blender, add cream, salt and pepper. Serve immediately.
