Excellent soup - sweet butternut squash with a kick from cayenne pepper - family favorite.

Recipe Ingredients for Butternut Squash Soup

6 cups butternut squash, cubed
3 cups chicken broth
6 T onion
4 T smart balance light
8 oz. reduced fat cream cheese
1/2 t marjoram
1/4 t black pepper
1/8 t cayenne pepper

Recipe Directions for Butternut Squash Soup

  1. Cook onion in smart balance light until tender.

  2. Add chicken broth, butternut squash, and spices, and cook until butternut squash is tender

  3. Take 1/2 of mixture and add to blender with 1/2 of cream cheese. Puree. Do same with 2nd 1/2 of mixture. Heat soup, but do not bring to a boil.
