A relatively easy and very basic butternut squash soup recipe. Other vegetables could easily be added for a heartier soup.

Recipe Ingredients for Butternut Squash Soup

3 cups butternut squash
1/2 onion
2 cups vegetable broth
4 tsp minced garlic
1 tbsp heavy cream
1 tbsp olive oil
1 tbsp butter
1 salt, black pepper, garlic powder, chili powder, and nutmeg to taste

Recipe Directions for Butternut Squash Soup

  1. Preheat oven to 400 F.

  2. Halve squash and scoop out the seeds. Place both halves cut-side down into a pan lined with a shallow layer of water and bake for 45 minutes (or until tender).

  3. Heat oil and melt butter in a large pot on the stove. Add onions and garlic and cook until tender. Add squash, vegetable broth, and season to taste. Bring to a boil, then let simmer for 20 minutes to a half hour.

  4. Puree soup in a blender, food processor, or with a hand blender.

  5. Add cream, stir, and serve.
