Recipe Ingredients for Butternut Squash Soup

2 T olive oil
2 pounds butternut squash
1/2 pound carrots
1 medium onion
3 cloves garlic
1 T salt
1 t pepper
1 t thyme
3 1/4 cups chicken broth
1/3 c cream

Recipe Directions for Butternut Squash Soup

  1. Chop everything and saute olive oil, squash, carrots, onion and garlic with salt, pepper and thyme over med-high heat for 12 minutes.

  2. Add chicken broth, bring to boil, then reduce heat, cover, and simmer for 30 minutes.

  3. Add cream, puree and serve.
