Gret winter comfort soup! Can serve with dollop of sour cream as garnish, if desired.

Recipe Ingredients for Butternut Squash soup

5 c butternut squash, peeled, seeds removed, cubed
14 oz chicken broth, fat free, low sodium
2 tbsp onion powder
2 cloves garlic, minced
12 oz evaporated skim milk, fat free
1/2 c skim milk
1/4 tsp curry powder
1 salt and pepper to taste
1 dash nutmeg

Recipe Directions for Butternut Squash soup

Pour broth into med saucepan. Add onion powder and garlic. Bring to boil. Add squash and cook until tender. Put mixture into blender and puree. Add back to pot. Add remaining ingredients. Can serve with dollop of sour cream (not figured into calories).
