Recipe Ingredients for Butternut Squash Soup

1 squash
2 tablespoons unsalted butter
1 onion chopped
1/2 teaspoon nutmeg
6 cups chicken stock
1 peeled apple

Recipe Directions for Butternut Squash Soup

  1. Peel and chop into 1"chunks butternut squash and apple.

  2. Melt butter inlarge pot and cook onion until translucent - about 8 minutes.

  3. Add stock and squash - bring to a boil and simmer until squash is tender.

  4. Remove chunks with slotted spoon and place in a blender- puree.

  5. Return blended squash to pot. Season with nutmeg, salt and pepper.
