This is a lighter version (the original recipe calls for 4 tbsp butter, 1/3 cup heavy cream and 1/2 cup brown sugar, instead of the small amount of butter plus canola oil, half and half, and Splenda brown sugar blend, respectively).

Recipe Ingredients for Butternut Squash Soup

1 small onion, finely chopped
1 tsp butter
2 tbsp canola oil
3 lb. butternut squash, peeled and cubed
1 tsp rubbed sage
4 cups chicken stock, no salt added
1/2 tsp salt
1/4 tsp pepper
1/3 cup half & half
1/4 cup Splenda brown sugar blend
1 tsp cinnamon, ground
1/8 tsp nutmeg, ground

Recipe Directions for Butternut Squash Soup

  1. Saute onion in butter and canola oil in a stockpot over medium heat.

  2. Add squash, sage, chicken stock, salt and pepper. Cover and bring to a boil. Simmer, covered, for 20-30 minutes, until squash falls apart when stuck with a fork.

  3. Puree soup portions in blender (firmly covered!) in small batches. Return pureed mixture to stockpot.

  4. Stir in half & half, brown sugar, cinnamon and nutmeg over low heat. Taste the soup and season additionally, as desired.

  5. Serves 6-8. Portions calculated at 6 servings.
