Recipe Ingredients for Butternut Squash Soup

3 lb butternut squash
1 med onion
2 tsp butter without salt
4 cups chicken broth

Recipe Directions for Butternut Squash Soup

  1. Preheat oven to 360F

  2. Cut butternut squash in half and lightly oil baking pan with extra virgin olive oil. Place cut sides down and roast for 45 minutes.

  3. Let squash cool on baking pan with cut sides down for 20 minutes.

  4. Finely chop onion and sautee in large soup pot with 2 tsp butter (unsalted) for 10 min over medium heat - or until onions are soft.

  5. Add 4 c. organic chicken broth and simmer.

  6. Scoop squash out of skin and add to simmering chicken broth. Turn off the heat.

  7. Laddle mixture into food processor (or blender) and puree until smooth. Add water to adjust consistency.
