This soup uses the leftovers for a quick lunch or starter at dinner. I used homemade chicken stock that I keep in the freezer. Any veggie with a grain and stock will do, then add the appropriate spice to taste. this was inspired by an Umbrian recipe.

Recipe Ingredients for Butternut squash soup

2 cups stock
1 cup butternut squash
1 cup celery root
1 oz. barley or farro

Recipe Directions for Butternut squash soup

Use leftover veggtables or add chopped veggies to stock with cooked farro or other grain and simmer. If stock not seasoned as 1/2 tsp and peper to taste. Ground cardamon or nutmeg to taste is a nice addition.
