3 lb butternut squash
2 carrots
1 onion
4 garlic cloves
30 oz of beans
6 cups chicken stock
1 bunch spinach
1 tbsp olive oil

Recipe Directions for Butternut squash soup

  1. fry onion, carrots, garlic, in olive oil for 10 minutes.

  2. Add stock, cubed squash, pepper, cook for 20 minutes.

  3. Puree about 4 cups of squash, then add beans and spinach.
