An easy and quick way with a twist on a great fall soup.

Recipe Ingredients for Butternut Squash Soup

2 pounds butternut squash
1 1/2 cups chicken broth
2 tbsp basil
2 tbsp heavy cream

Recipe Directions for Butternut Squash Soup

  1. Prick squash with a fork about 6 or 7 times and place in microwave covered with damp paper towels. Microwave on high 6-7 minutes or until squash is soft when pricked with a fork. Use pot holders to handle squash - it's hot!!! Allow to cool until you can handle squash without burning your hands.

  2. While squash is cooling, prepare broth and allow to boil.When cool, cut squash in half and scoop out seeds; throw away seeds. Dice meat of squash and basil and place in broth. Lower heat and allow to simmer for 20-30 minutes.

  3. Transfer everything to a heat-resistant blender and puree to your preferred texture.

  4. Ladle into bowl and add heavy cream according to your preference.

  5. Serve with soft bread, side salad, or add low-fat cheese.
