Tasty soup that's really easy to make! Would be equally good with acorn squash, if you have that on hand. Chicken stock can be replaced with veggie stock for vegetarians. Found on allrecipes.com

Recipe Ingredients for Butternut squash Soup

3 cups butternut squash, cubed (appromiately 1 squash)
1 medium onion, diced
2 small potatos, diced
1 carrot, chopped
1/4 cup celery, diced
2 tbsp olive oil or butter
4 cups chicken broth, sodium free
4 tbsp plain yogurt
1 salt and pepper to taste

Recipe Directions for Butternut squash Soup

  1. Melt butter in a heavy stockpot

  2. Add all vegetables (squash, onion, carrot, celery, potato) and saute until lightly browned (about 5 mintues).

  3. Add enough chicken stock to cover the veggies,bring to a boil, then reduce heat and simmer about 40 mintues, or until veggies are soft.

  4. In batches, puree the soup in a blender (with cloth over top to prevent huge soup explosions!) and add back to the pot.

  5. Add the rest of the stock and the yogurt, and mix until smooth.
