Butternut Squash, Parsnip and Pear Soup

Recipe Ingredients for Butternut Squash Soup

1 tbsp Vegetable Oil, Canola
6 cup cubed Squash Butternut
2 cup slices Parsnips
2 cup Onions
2 clove Garlic
0.17 serving Paprika Smoked
0.5 tsp Cinnamon, Ground
1 tsp Sea Salt
6 cup Organics Chicken Culinary Stock
1.5 tbsp Unsalted Butter
2 pear, large (approx 2 per lb) Pears
2 tsp Sugars, Granulated

Recipe Directions for Butternut Squash Soup

  1. Heat the canola oil In a large skillet over high heat. Add the squash and saute for 5 minutes until golden brown on the edges. Add parsnip, and continue to cook over high heat for 3 minutes more, or until the parsnip just colors. Reduce heat to low, add the onion and garlic. Cook, stirring often for 5 minutes until softened. Add the smoked paprika, cinnamon and sea salt, stir. Add 1 cup of stock to deglaze the pan. Pour the contents of the skillet into a large soup pot. Add the remaining 5 cups of stock. Bring to a boil, then turn down heat, cover and cook for 30 minutes at a simmer until the vegetables are tender.

  2. In the meantime, saute the pears. Heat the butter in 12" skillet over medium - high heat. Add the peeled pears, toss to coat. Add the sugar, stir just once and let the pears caramelize. Stir the pears when they have some color on the underside until golden all around. Set aside.

  3. When the soup is ready, add the pears, and the juices in the skillet to the pot. Puree 1/2 of the soup in a blender, add it back to the pot, and stir to combine.

  4. Garnish the soup with chopped chives or a minced herb of your choice.
