Butternut squash soup gets a little extra sweetness from apple

Recipe Ingredients for Butternut Squash Soup

4 cup, cubes Squash, Winter, Butternut
1 medium (2-1/2" dia) Onions
2 small (2-3/4") Apples
4 clove Garlic
24 fl. oz Trader Joe's Low Sodium Chicken Broth
8 serving Fat Free Half and Half
2 tsp Thyme, Fresh
1/4 tsp Sea Salt
1 dash Pepper, Black
1/4 tsp Allspice, Ground
1/4 tsp Cumin

Recipe Directions for Butternut Squash Soup

  1. Preheat oven to 350

  2. Cut butternut squash into 4-6 large chunks and scrape out the seeds.

  3. Spray lightly with olive oil, salt, and pepper and roast for about 45 minutes

  4. Cut onion & apple into chunks and peel garlic cloves.

  5. Let squash cool until just cool enough to handle, then pull skin off of butternut squash.

  6. Add garlic, onion, spices, and apple to saucepan with chicken broth and bring to a simmer. Simmer for about 15 minutes, then add butternut squash and simmer 15 more minutes. Blend with a stick blender until smooth.

  7. Add the half and half and heat for another couple minutes before serving.
