2 pounds butternut squash
4 cups chicken stock
1 1/4 cups creme fraiche
2 tablespoons butter

Recipe Directions for Butternut squash soup with creme fraiche

  1. Peel, core, and dice the squash into 2 inch chunks.

  2. Cover with chicken stock, bring to a boil, and simmer for 20 minutes until tender.

  3. Puree soup in a blender. With blender running, add creme fraiche. Salt to taste
