Recipe Ingredients for Butternut Squash soup with apples and bacon

2 lbs butternut squash, peeled, seeded & cubed in small pieces
1 large white onion
4 medium slices bacon
2 apples, peeled, cored, & cubed
3 tbsp extra virgin olive oil
2 tbsp garlic, minced
6 cups chicken broth
1/2 cup white wine
1 tbsp sage, fresh, chopped

Recipe Directions for Butternut Squash soup with apples and bacon

  1. Prepare first 4 items. Put into a baking dish. Sprinkle minced garlic on top. Salt and pepper to taste. Drizzle Olive Oil over top.

  2. Roast in the oven @ 400degrees for approx 30 minutes (or until squash is tender and bacon is crisping)

  3. Put Broth, Wine & Sage into a large dutch oven. Add ingredients from the roasting pan.

  4. Simmer for approx 25 minutes, or until the apples and squash have started to break up enough to thicken the broth. *You may need to whisk the mixture to help this along.

  5. Season to taste & serve! Add a pinch of nutmeg if desired just before serving.
