Calorie Count is for one cup of soup - For the specific ingredients I used, the nutritional analysis (below) was a bit inaccurate. My actual calorie count using fat-free chicken stock, plain soy milk and coconut milk was 101 calories per cup.

Recipe Ingredients for Butternut Squash soup-adapted from two other recipes on this site

20 oz. butternut squash
1/2 tbsp. olive oil
2 3/5 oz. onion
5 1/2 oz. apple
1/4 cup coconut milk
1/4 cup soy milk
2 cups fat-free chicken broth

Recipe Directions for Butternut Squash soup-adapted from two other recipes on this site

  1. Roast squash until soft. Remove peel.

  2. Heat olive oil in saucepan

  3. Peel onion and chop, chop apple

  4. Saute onion and apple in olive oil until soft

  5. Mix in squash

  6. Add dash of curry powder, nutmeg and cinnamon

  7. Add chicken broth

  8. Simmer until tender

  9. Blend with hand-held blender or in blender

  10. Stir in soy milk and coconut milk
