Delicious sweet, spicy soup for fall.

Recipe Ingredients for Butternut squash sausage soup

2 cups water
1/2 cup brown rice
4 cups cooked butternut squash
1 tbsp olive oil
1 onion
1 lb turkey sausage, casing removed
1 cup frozen corn
25 oz chicken broth
1/2 cup heavy cream

Recipe Directions for Butternut squash sausage soup

  1. Preheat oven to 375 degrees F. Pour 1 cup water into 9x13 baking dish

  2. Cut squash in half lengthwise and scoop out seeds, place in baking dish cut side down.

  3. Bake in oven until squash is easily pierced with fork, about 45 min.

  4. Meanwhile, cook rice in remaining 1 cup water.

  5. Heat olive oil in large soup pot, add onion, cook until tender. Mix in sausage, I use chicken mango chipoltle sausage.

  6. Cook until sausage is crumbly and evenly browned. Stir in cooked rice and corn.

  7. Scoop out cooked squash and blend or use food processor with chicken broth.

  8. Stir squash mixture into sausage mixture, add heavy cream and simmer until heated through.
