Roasted vegetables with fresh spinach and a cider vinegar dressing.

Recipe Ingredients for Butternut Squash Salad

4 cup Spinach
24 oz Squash, Winter, Butternut
3 medium Carrots
1 large Onions
1 cup, diced Celery
1 tbsp Syrups, Maple
1 1tsp Olive Oil
1 tsp Sea Salt
1 tsp Pepper, Black
1/4 cup Apple Juice
2 tbsp chopped Shallots
2 tsp Vinegar, Cider
1 tsp Classic Dijon Mustard
1/2 cup toasted almonds
1/2 cup shredded Parmesan cheese

Recipe Directions for Butternut Squash Salad

  1. Dice squash, carrots, onions and celery into 1/4"-1/2"dice.

  2. Mix 1 T olive oil, 1 T syrup, 1t salt and 1t pepper in gallon zip lock bag and add all diced vegetables. Mix well and pour into aluminum foil lined baking pan. Bake at 400* for 20 minutes.

  3. Meanwhile, put apple juice, apple cider and shallots in small saucepan and bring to a boil. Cook 7-8 minutes until reduced by 25%. Whisk in olive oil and mustard. Salt and pepper to taste.

  4. Add cooled cooked vegetables to spinach and toss with dressing.

  5. Add toasted nuts and parmesean cheese and serve.
