Recipe Ingredients for Butternut Squash and Roasted Garlic Puree

4 lb butternut squash
20 cloves garlic
2 tbsp extra virgin olive oil
1/4 c water
2 leeks, including tender green parts, finely chopped
5 c vegetable broth
2 tbsp chives or fresh parsley

Recipe Directions for Butternut Squash and Roasted Garlic Puree

Cut squash in half lenth wise and remove the seeds and any fibers. Carefully remove the pool and cut flesh into 1 inch slices. In a roasting pan combine the squash and garlic. Drizzle with 2 tbsp of olive oil and toss until well coated. Roast stirring occasionally for 50-60 minutes. Add more water if squash begins to scorch. Heat remaining 2 tbsp in a frying pan and sautee the leeks until golden brown, 12-15 minutes. Set aside. Blend the squash, garlic and leeks, in batches with 1 cup of the vegetable stock. Puree until very smooth. Transfer squash puree into large saucepan. Stir in the remaining 4 cups of broth and bring to a simmer. Season with salt and pepper to taste.
