Recipe Ingredients for Butternut Squash Risotto

1 cup arborio rice
2 tablespoons olive oil
2 tablespoons butter
1 cup onion, chopped
3 cups chicken stock
2 cups butternut squash

Recipe Directions for Butternut Squash Risotto

  1. In a medium saucepan, saute onion and butter for about three minutes.

  2. Add rice and stir for about two minutes.

  3. Add one cup of broth and stir until absorbed.

  4. Add reamining broth one cup at a time while stirring.

  5. Add butternut squash that has been cubed and roasted golden to the rosotto

  6. Serve immediately
