Recipe Ingredients for Butternut Squash Risotto

2 1tsp Olive Oil
3 cup, cubes Squash, Winter, Butternut
1 medium (2-1/2" dia) Onions
2 cup Arborio Rice
8 fl oz Wine, Table, White
4 cup Organic Chicken Cooking Stock
1 cup (8 fl oz) Water
4 oz Parmesan Grating Cheese

Recipe Directions for Butternut Squash Risotto

Peel and cube one medium butternut squash. Drizzle with olive oil, season w/ salt and pepper. Roast on baking sheet in oven at 400 until browned and tender, about 30 minutes. Meanwhile, heat chicken stock and water in medium saucepan to simmer. Chop bacon into bits and brown on stovetop in large dutch oven. Add diced onion until softened. Add rice and cook for about 5 minutes until fragrant & toasty smelling. Add wine and cook down. Add warm stock/water a ladleful or two at a time. Stir until liquid has absorbed into rice. Continue adding stock a ladleful or two at a time until all the liquid has been absorbed. Off heat, stir in squash and cheese. Season with salt and pepper to taste.
