Recipe Ingredients for Butternut Squash Risotto with Bacon

4 cups chicken broth
1/2 cup white wine
2 T olive oil
4 medium slices of bacon
1/4 cup shallots
2 cups butternut squash
1 1/2 cup Risotto
1/2 cup parmesan cheese

Recipe Directions for Butternut Squash Risotto with Bacon

  1. Fry bacon, drain and set aside

  2. Add oil to same skillet and saute shallots

  3. Add white wine and broth to skillet

  4. Add risotto...cook until tender.

  5. Add squash and bacon...toss with cheese
