Curry and ginger with butternut squash, actually make it with Veggie stock so it's VEGAN.

Recipe Ingredients for Butternut Squash

1 tbsp olive oil
1 tbsp coconut oil
1 1/2 large squash
1 large onion
6 cloves garlic
1 tbsp minced ginger
1 1/2 tbsp curry powder
1/2 tsp sea salt
1/2 tsp pepper
2 tbsp tomato paste
2 tbsp lemon juice
4 cups chicken stock

Recipe Directions for Butternut Squash

  1. Sautee onion, garlic, ginger, curry, salt and pepper.

  2. Meanwhile bake squash.

  3. Holow out squash, add to sauteed mixture with veggie stock.

  4. Simmer until everything's VERY tender

  5. Blend in 3 batches, pouring through a sieve into a new bowl.

  6. Can add milk (I use almond milk) to add just before serving which gies it a subtler, smoother finish.
