Butternut Squash stuffed ravioli with brown butter and sage sauce

Recipe Ingredients for Butternut Squash Ravioli with Brown Butter and Sage Sauce

9 pat (1" sq, 1/3" high) Butter
2 cup, cubes Squash, Winter, Butternut
2 dash Salt, Table
1/4 tsp Spices Ground Black Pepper
3 tbsp Heavy Cream
3 tbsp Parmesan, Grated Cheese
1/4 tsp Nutmeg
40 wrapper, wonton (3-1/2" square) Wonton Wrappers
1 tbsp Sage, Ground

Recipe Directions for Butternut Squash Ravioli with Brown Butter and Sage Sauce

  1. In a large saute pan melt 1 tbsp butter, add squash puree and cook until slightly dry. Season with salt and pepper. Stir in the cream and continue to cook for 2 minutes. Remove from heat and stir in 3 tbsp parmesean and nutmeg. Cool completely.

  2. Lay out wonton wrappers. Put about a tsp mixute in center of each. Wet two edges of the wrapper and fold over. In the mean time, put a pot of salted water on to boil.

  3. Place stuffed wontons into the boiling water. Cook, until they float.

  4. In a large saute pan melt remaining butter and sage, cook until the butter is brown. Spoon sauc eover pasta and sprinkle with parmensean.
