1 whole wheat tortilla
1 cup butternut squash
1/2 cup black beans
2 oz pepper jack cheese

Recipe Directions for Butternut Squash Quesadilla

Roast squash for 40 minutes. Cool. Cut off skins. Layer squash with beans and cheese. Wrap up and bake for 15 minutes until cheese is melted.
