Recipe Ingredients for Butternut Squash and Potato Gratin

1 cup red potatoes
2 cups butternut squash
1 cup half and half
1 tbsp flour
3/10 cup parmesan
1/2 cup cheddar cheese
2 tbsp butter
1/4 cup onion
3/10 cups breadcrumbs
1/5 cup cheddar
2 tsp rosemary

Recipe Directions for Butternut Squash and Potato Gratin

  1. roast potatoes, squash and onions for 15 minutes

  2. make bechemel by melting butter, add flour and hot half and half, bring to boil while whisking

  3. take off heat and add cheddar and parm

  4. put taters, onion and squash in casserole dish, pour sauce over it, sprinkle w/ remaining cheese and breadcrumbs

  5. bake for 30 minutes
