Quick and tasty vegetarian taco filling for hard- or soft tacos.

Recipe Ingredients for Butternut Squash and Pepper Taco filling

3 cups butternut squash
1 poblano pepper
1 pinch red pepper
2 tsp olive oil

Recipe Directions for Butternut Squash and Pepper Taco filling

  1. - preheat oven to 400 degrees

  2. - peel, seed, and chop squash into 1.5 inch chunks

  3. - seed pepper and chop into .5 inch slices

  4. - put both in small casserole and sprinkle w/ rep pepper and olive oil

  5. - mix thoroughly

  6. - bake for about 25-35 min- depending on preference for doneness

  7. - serve w/ hard or soft taco shells, cliantro, scallions or red onion, chopped tomatoes, chopped red pepper, queso fresco, fresh lime, tomatillo salsa, guacamole, sour cream, and side of black beans
